Monday 10th November - Bake a cake

 It's on the November list, and I've done it!

I made a fruit cake, the first in my annual quest for a Christmas Cake that we will both like. 

This was a pretty quick and basic effort. I started with the usual 2-egg Victoria sponge all-in-one method that I nearly always use; 2 eggs, 4 oz each of soft butter, sugar and self-raising flour. This time I used 2 oz black treacle - what a game-changer those squeezy bottles are - and a scant 2 ounces of light brown sugar. It all went into the bowl together with around 2 teaspoons of mixed spice. When it was all well combined I added around 10 ounces of mixed fruit.

I reduced the sugar because the fruit is sweet. I'd also normally want a tablespoon of milk to loosen the batter when mixing but I think the liquid in the treacle was enough. 

Then I cooked it in the airfryer, for 50 minutes at 150C. 

Verdict - a good flavour, possibly a little under baked in the middle, and a bit sticky. I doubt we'll have any difficulty finishing it though!

The Great Joy for me is being able to make the cake at all! Last week has been tough. All that sitting around and being so cautious about doing anything at all has driven me slightly stir-crazy. I had planned to get out and be more active instead of going into slump for Autumn and Winter. But this the chart of my step count from Friday 31st October  to Wednesday 5th November - I was regularly getting to 3000 steps per day, then.... struggling to get to 200...

    1. Yes, me too. I think this recipe is promising. More fruit, and soak the fruit first, and nuts and citrus zest and I think it's about there.

  6. Hugs. I'm glad that you're feeling a little better.
    My life has been made considerably easier because we all admitted that while we don't *mind* fruit cake, none of us would pick it first, so I don't bother making one anymore. It's such a relief, but yours sounds really nice and a good, rich, flavoursome fruit cake with exactly the right proportion of dried fruit.

    1. There are a lot of traditional foods that if we're honest we only eat because - well, tradition! I've never cared for Christmas pudding... I only ate it as a child for the coins inside

    Air fryer cakes and scones and biscuits are very acceptable. I don't make them - I'm just the grateful recipient.

  8. I have fallen short, I'm afraid. My husband really likes the M&S Christmas cake - the one with all the nuts on the top - and I'm not that bothered, so I just buy one. Hope you continue to feel a bit better.

    1. I'd buy it like a shot, but he says all the bought ones are too sweet. And most of the home-made recipes too! What he likes is a Scottish Black Bun, if I can get it. Goes well with whisky, he says.

  9. Good for you, getting your cake made. Slightly sticky sounds good to me - I finally stopped making it because husband found them too dry three years in a row. We now go with pudding, as I can make a moist one that pleases all.

  10. How lovely that your cake turned out so well. After making Christmas cakes for many years this year one of my daughters will be making it. I think I have lost my taste for it.
