SR flour, double cream and .... fizzy lemonade! Of course I didn't have any lemonade in the house; the question was, 'would a can of Kopperburg non-alcoholic cider with strawberry and lime work as a substitution?' After all, it's sweet, fizzy, and citrus flavoured...
This is the recipe from the bbcgoodfood website. It's not the recipe I used this time, but I have used it before and it is very reliable.
I sort of bodged my way through, leaving out the egg (which I've never used in scones) and just sort of arriving at something that looked and felt about right.
They tasted fine; the lemonade scones always have a faint scent of lemon when they come out of the oven but it doesn't affect the flavour. These ones came out faintly strawberry scented!
Do give the recipe a try! (They only reason I would ever want to go on Bake-off would be to make lemonade scones for Paul Hollywood without him knowing and see his reaction)
