SR flour, double cream and .... fizzy lemonade! Of course I didn't have any lemonade in the house; the question was, 'would a can of Kopperburg non-alcoholic cider with strawberry and lime work as a substitution?' After all, it's sweet, fizzy, and citrus flavoured...
This is the recipe from the bbcgoodfood website. It's not the recipe I used this time, but I have used it before and it is very reliable.
I sort of bodged my way through, leaving out the egg (which I've never used in scones) and just sort of arriving at something that looked and felt about right.
They tasted fine; the lemonade scones always have a faint scent of lemon when they come out of the oven but it doesn't affect the flavour. These ones came out faintly strawberry scented!
Do give the recipe a try! (They only reason I would ever want to go on Bake-off would be to make lemonade scones for Paul Hollywood without him knowing and see his reaction)

Text from 'Aedh Wishes for the Cloths of Heaven'
by William Butler Yeats (1865-1939)
Had I the heavens' embroidered cloths,
Enwrought with golden and silver light,
The blue and the dim and the dark cloths
Of night and light and the half light,
I would spread the cloths under your feet:
But I, being poor, have only my dreams;
I have spread my dreams under your feet;
Tread softly because you tread on my dreams.

I've always loved the words 'Tread softly.....'
ReplyDeleteIt is a wonderful poem
DeleteThose lemonade scones sound interesting. I am rather tempted to try them.
ReplyDeleteI went through a phase of making them a year or so ago. I wonder who came up with the recipe!
DeleteThe scone recipe is interesting. When we next have any lemonade I will try them. The singing is heavenly in your music film today. Regards Sue H
ReplyDeleteWasn't the music beautiful. So tender.
DeleteThe scones look so moreish!

Yes, I completely agree about both the scones about the music!
DeleteThose scones look delicious, and what an interesting recipe.
ReplyDeleteThey were pretty good! The proper recipe would come out better.
DeleteThey look delicious.
ReplyDeleteMy sister makes the most delicious cheese scones and she said she's making some for when I come to visit! Last year she brought one to the airport with her. Fingers crossed, she'll bring one again lol
That would be quite the welcome!
DeleteI have never been confident at making scones but like the idea of lemonade scones, they look just right! I'll give the recipe a try.
ReplyDeleteThey worked for me, better than my usual effort. I'll snap open another can of kopperburg as I don't like it as a drink, but it seemed to work in a scone!
